When everything’s said and done, one of the most important things you need to know about getting rid of grease is this: never, ever, ever, ever, ever pour cooking grease down a drain, or otherwise let it get into your plumbing system. There is no acceptable amount of grease to consider as an exception to this rule – even if you’re pouring it down with scalding hot water.
The reason for this is that liquidized fats like grease that comes from bacon or other meats are only liquids at a high temperature. Once they meet up with cool water, they begin to congeal and harden, repelling water and collecting other debris. This can wreak major havoc on your plumbing system, or even the plumbing system of your neighbors or an entire city. For this, and other reasons, when your hard work in the kitchen results in grease, be sure to wait until it cools, and then wipe it safely into the trash bin.
